Things to Know About Egg White Protein Powders:

First, some product labels list “egg white powder”, “egg white protein” or “albumin powder” as the primary ingredient. Essentially, they all refer to the same thing: egg whites dehydrated into powdered form. Use them for high protein mug cakes, muffins, low carb wraps or crepes, pancakes, and egg white breads.

In addition, all of the egg protein powders above have been pasteurized. This inactivates the avidin glycoprotein, which has 2 positive effects. For one, raw egg whites contain avidin, which binds to the B vitamin biotin, not allowing us to absorb this nutrient. And two, cooking or pasteurizing makes the protein in eggs more easily absorbed.

The Pros & Cons of Lecithin: Some protein powders include sunflower lecithin because it allows for smoother blending when making protein shakes. However, this added ingredient means that you’ll need to whip for longer to achieve stiff peaks (for meringue, protein bread dough, etc..).

Egg White Protein Nutrition:

Egg whites consist of mostly protein (no fiber, fat, cholesterol, sugar and virtually no carbs). The powdered form carries a higher quantity of sodium than other body-building powders, with some potassium and minimal calcium.

Note: You can expect about 15 servings per 1-pound of pure egg white protein powder. (Assuming the serving size contains 25 grams of protein).
