3 Ways to Get Stiff Peaks with Egg White Powder

Whipping Egg Whites

Do you want to use egg white protein powder to low carb egg white bread? Here are 3 easy ways to get stiff peaks in about 5 minutes or less.

How Long Does It Take? If your whites won’t stiffen or they are not forming soft peaks, scroll down the page for tips on how to fix this. You can do this in under 5 minutes!

1. Whipping with a Stand Mixer:

Best Stand Mixer

A stand mixer is probably the most popular option for whipping egg whites. First of all, this is hands-free mixing. Just set a timer and spend your time prepping other food in the kitchen.

Second, stand mixers come with a tall-sided bowl. Taller bowls work better at containing powdery messes or splashes inside the bowl, plus they take less space to store.

I like about this GE mixer because it has very similar features to the KitchenAid version that everyone loves. However, you can save over $100.

In fact, the GE Tilt-Head has a more powerful motor (350 watts vs 325) and a a slightly larger bowl (5.3 quart vs 5 quart). That said, the KitchenAid has 10 speeds instead of 7.

Note: One thing I considered when shopping for stand mixers was the size of the bowl. If you plan on making larger batches of egg white bread, you may prefer a 7 or 8 quart bowl.

However, larger machines take up more space on your counter and storage cabinet. The 5.3 quart is big enough to mix egg whites for a loaf of bread, but compact enough for easier storage.

Plus, the package includes the stainless steel bowl with handle, wire whisk and pouring shield. You also get a bonus flat beater and dough hook.

2. Whisk Egg Whites with an Immersion Blender:

Immersion Blender for Whipping

When I started making egg white protein bread, I only had a Hamilton Beach immersion blender. It turns out that you can – with a whisk attachment.

In fact, I can easily get firm peaks in under 5 minutes using this little inexpensive gadget. Of course, you don’t get the hands-free advantage, but if you already have one of these blenders it’s worth a try.

Actually, if you’ve ever wanted to try an immersion blender (they work exceptionally well for making home-made mayonnaise), this package is a great deal. For under $50, this Hamilton Beach multi-tool includes both immersion and whisk attachments, plus a small food processor chopping bowl with blade.

This unit is also really quick and easy to clean. However, the device has a smaller 225 watt motor and only features 2 speeds.

3. Whip Egg White Powder with an Electric Hand Mixer:

Mueller Hand Mixer

Lastly, if you want to achieve the perfect level of fluffiness and lift in your baking creations, try out a hand mixer. These small appliances are designed specifically for whipping egg whites to hard peaks. Plus, you have complete control over the speed settings.

The mid-range size motor (250 watts) provides just the right amount of power to beat eggs until they reach their desired consistency. Not to mention, the Mueller Mixer has most of the same features of the Food Network’s top picks.

Note: When using a hand mixer, remember these tips. First, start at low speed and gradually increase it until the mixture thickens. Second, Epicurious Magazine says to make sure all ingredients are at room temperature for better incorporation. And third, always scrape down the sides of the bowl to ensure thorough mixing.

Handheld mixers don’t take up much storage space, and many now come with their own handy storage containers. Plus, you can just throw the beaters in the dishwasher for quick cleaning.

The soft-grip handle on this model makes whipping egg whites more comfortable, but you still have to mix by hand. That said, if you don’t mind holding the handle, you can’t beat the low price.

Easy Tips for Better Consistency with Protein Powder:

When baking with protein powder, particularly egg white protein powder, there are specific techniques to ensure the best results, similar to those used with traditional egg whites. Just as with real egg whites, it’s crucial to avoid the introduction of fats before whipping them.

Fats can inhibit the formation of a stable foam structure, which is essential for achieving stiff or firm peaks. This principle holds true whether you’re using fresh egg whites or their powdered equivalents.

In fact, the recipe for egg white PSMF (protein sparing modified fast) bread on Maria Emmerich’s website is basically egg white protein powder, water and cream of tartar.

Note: Before you turn on your electric appliance to start beating or whisking, I suggest gently stirring all ingredients together for about 10 seconds. This quick step will incorporate the powder into the water, preventing powder from flying everywhere and creating a dusty mess in your kitchen.

She also adds allulose to achieve the brown crust on her bread, as well as salt for flavor. Both ingredients are optional. Not only does it help create that beautiful golden color, but it also adds a touch of sweetness without overpowering the flavor of the bread. Of course, this ingredient is optional, so feel free to experiment and see what works best for you.

As the popularity of her keto bread recipe has grown, many people have incorporated different flavors and seasonings into their breads. For example, some people add Italian seasoning, butter flavor or even cinnamon with stevia for a sweeter bread.

Note: You want to beat the egg whites first, and then fold in the additional spices or flavorings afterwards. (By the way, all of these tips and methods can apply to real egg whites as well.)
