Note: You can use Xanthan Gum and Glucomannan interchangeably; they both act as thickeners/stabilizers. How do they differ nutritionally? Xanthan Gum has 2 grams of fiber per teaspoon, whereas Glucomannan has 4 grams per teaspoon.


I opt for Glucomannan because it aids in reducing cholesterol and blood sugar levels. But if you aim for lower carbs, opt for Xanthan Gum.

I whip up the batter in a bullet blender and then pour it onto a skillet or griddle (you can use this to make low-carb waffles too). Make certain to generously spray your cooking surface, as egg whites commonly stick during cooking.
