Several people have made adaptations to Maria’s original recipe, adding ingredients like whole egg powder, butter powder and gelatin. These ingredients tend to make the texture less dry and more bread-like. If you want to experiment, you can watch Indigo Nili’s recipe video here.
Baking Bread in Crock Pot VS the Oven:
Essentially, you can use the same protein bread recipe using the same ingredients, whether you bake it in an oven or a crock pot. In fact, I line my crock pot with parchment paper just like I would an oven baking pan.
However, a slow cooker bakes bread differently than an oven because it retains moisture. Actually, this is one of the reasons why I prefer cooking egg white bread in a crock pot.
Note: Too much moisture can result in a soggy bread, though. So I lay a piece of paper towel under the lid of the crock pot (not touching the bread). The paper absorbs the excess steam and water, easily solving the problem of wet bread.
How Long Do You Cook Egg White Bread in a Crock Pot?
As far as cooking time, I set my slow cooker on high for 2 hours. Usually, the bread is done in around 1 hour and 20-30 minutes.
You can tell if the bread is finished by touching the top center of the loaf with your finger. Or, you can stick a knife through the center of the bread. If the bread springs back or the knife pulls out clean, your loaf is done.
I have found that if I forget my bread and leave if cooking for the full 2 hours, it comes out fine. slow cookers are very forgiving in that way, so you don’t have to worry about a perfect cooking time.
Note: The parchment paper makes it super easy to lift the bread out of the dish. Plus, you don’t have to wash the container.
I use Walmart’s Great Value non-stick parchment paper. I used to think that all parchment paper was the same as far as “non-stick”, however, this brand works so well that I can use it multiple times. And it’s cheap!
